The preference files are installed during the installation, and without them there is a problem. When you open the Mac installer it says "Drag Starry Night to the Applications folder". There is a Starry Night folder, an application folder, and a triangle between them. Take the Starry Night folder and drag it across the triangle and into the Application s folder. After it finishes the installation, go to your Applications folder and double click the Starry Night application to start the program. Everything should work right.
Mac installation instructions:
A window will open with the Starry Night program on the left side, the Mac Applications folder on the right side, and a triangle between the two. To install, you simply drag the Starry Night program over the triangle and onto the Applications folder.
Starry Night will be installed in the Applications folder. Run the Starry Night program and register when prompted.
Starry Night College 6 will not open on my iMac. Whenever I try to open it an error message appears that says "There was a problem opening the Preferences file. Try throwing it out and starting again." How do I fix this issue?

A bit later... I have SN Pro Plus 6 running on High Sierra. It's on a Mac laptop that has had a number of OS upgrades and a few Starry Night upgrades. Not sure why it works, but it does. An attempt at a fresh install on a new Mac laptop (also running High Sierra) throws the error message described above.
If SN6 was installed before upgrading to macOS Sierra or High Sierra then it will still run. However, it can not be installed on to macOS Sierra or High Sierra. If you are running 10.13 or 10.14 and want to install Starry Night then you need to upgrade to SN7.
