I am considering purchasing an Ioptron R80 type telescope. It appears that Ascom does not have a driver for these models, as far as I can see, but Sky Safari does have drivers for Ioptron SmartStar. Can I assume this driver will run on the scopes I have listed in the Title section of this post?

We do have an entry for iOptron SmartStar 8401/2. I would assume this works but we don't have experience with this particular mount. Do yo know if it has an 8402 controller? You might have to contact iOptron and see if it is compatible.
I think it has an 8401 controller if I am interpreting the ioptron site correctly.
Another question: assuming this driver will run on the scopes I have listed in the Title section of this post, I should be able to connect the mount to SkySafari Pro using SkyBT and the appropriate serial to usb adapter. Is this a valid assumption?
No, you will definitely **not** be able to use a serial to usb adapter. Those adapters require drivers to work and there is no way you can install drivers on a SkyBT. If you want to use SkyBT you have to plug into the RS-232 serial port. I believe the 8401/2 HC has one.
