On Mac, the Starry Night and SkySafari share the same telescope drivers and protocols - settings will be the same.
On Windows, Starry Night uses Ascom to connect to telescopes. You need to consult the Rowan AZ-100 manual for Ascom instructions.
However, I will guess that if the Rowan AZ-100 accepts the Meade LX200 protocol in SkySafari then you can also use the Meade LX200 Classic Ascom protocol with Starry Night on Windows.
