I need an easy way to create a list of objects that I would like to observe for the night depending what's in the sky and the best time of night and year. I see that there is an observation list option or a ephemeris generator in the software package. Would this be the correct way to accomplish this task?

Starry Night Pro 7 includes an Advanced Finder that looks like this:
And, yes, there is also an Ephemeris Generator - all of which can be used to achieve your objectives.
