I know this won't replace a guiding setup but with SS6, when I'm aligned and locked onto an object, will the app keep the object centered throughout my pictures or will the object still slowly drift out of view. I've been having this problem and am wondering if the app will help solve this.

  Provided you have properly aligned your scope, an object in the eyepiece will remain in the eyepiece (for a certain amount of time).  SkySafari does not control the mount motors.  SkySafari will send your scope to an object.  Your mount will stay on target, all by itself.
