I'm hosting a star party in NC next month and at least two of us have SkyFi units operating in close proximity. Will they interfere with each other, and if so is there a solution?

No, they will not interfere. However, you might rename at least one of the SkyFi units to broadcast a name other than "SkyFi" (e.g "Kents_SkyFi"). Otherwise it is hard to know which one you are connecting to.
