I am using SkySafari 6 Pro and have "Stars Beneath Your Feet" selected horizon panorama. The lowest part of the sky visible in the south is about 5 deg 25', i.e. through Cassiopeia when time is set for 10:00 pm 6/9/19. But I can see the sky in the south much lower than that in reality. Why is it cutting off the sky so high and how do I change that?

You can try different horizon panoramas, or try none at all. The panoramas are there for your enjoyment, but not required.
Settings > Horizon & Sky > Horizon Display or Horizon Panoramas
