I am using the Celestron Wifi Module as an access point on my C14 & CGE Pro mount (which is not specifically listed as compatible) with the SkyPortal App on an iPad. After doing the StarSense alignment, I switch to SkySafari Pro on my Mac (also using the Wifi Module connection as access point.) The the scopes slews are so far off, it is unusable.
It is not mandatory that I use the Wifi, but I want to be able to control the CGE Pro mount with my laptop. Can this work? Is there a USB option?

If you want to use SkySafari Pro on Mac then do the StarSense alignment using SkySafari on Mac. You can not align via SkyPortal on iOS and then just switch to SkySafari on Mac.

But the Celestron CGE Pro Mount is supported (even though it is not listed in the supported mounts section of the documentation)?
And, is there a USB option? I don't see it in the set-up window. The StarSense hand controller is connected directly to my MacBook Pro vis USB.

CGE is available as a ScopeType option. And, USB will be available as a connection type is your USB cable is recognized by macOS. If you don't see the USB option then the cable is not recognized.
